Protein Zucchini Muffins

The other day I posted on Facebook saying that I was in a baking mood!! Actually, I was in a pretty awful mood...but baking always helps so that is what I do when I am down in the dumps. Luckily, the baking did make me feel a little better :) Anywho...someone commented suggesting I try something some high protein zucchini bread.  Well, I like to try and keep my readers happy, so I made a special trip to the store for some zucchini! I am happy to say, the first try was a success!
Of course I kept them super healthy and very easy to make.  The suggestion was actually for zucchini bread, but I prefer muffins and don't have a good bread pan.  You could easily make this as bread if you wish.

Ingredients include:
Zucchini, vanilla protein powder, oat bran, egg substitute, vanilla, cinnamon, baking powder, salt, and sweetener.
*I highly recommend Jay Robb egg white protein, but any vanilla will work*
*You could sub oat flour or any flour for oat bran*

You will want to grate you zucchini as fine as possible.  I used two small zucchinis, but there is no exact amount.  A little more or a little less will work fine.
You want to get the zucchini as dry as possible.  If you have the time to let it sit out a bit that would be great, but I was impatient. 

Just wrap it up in some paper towel and pat down.

In a separate bowl, mix together all the remaining ingredients.
Don't you just love the little portion bowls?! Hubby got me them for Easter :) So thoughtful! 

Mix everything together until it is smooth and add the zucchini.
Lookin good! Stir it up so all the zucchini is well coated.  It may seem a little dry at first, but the zucchini will continue to release some moisture. You could add some walnuts at this point if you wanted, but I am not a huge fan of them.  

Once again, I prefer muffins, but you can use whatever pan you like.
You can fill the muffin cups pretty full because these won't rise very much.  I topped mine with a little cinnamon/sweetener mixture.

Into the oven at 350 for about 20-25 minutes.  Not sure how long it would take if you made it as bread...let me know if anyone tries it.
Done! They puffed up perfectly! I was a little surprised my first attempt turned out so well. Yay!

As always, you can eat all 6 yourself.  The whole batch is only 260 calories!! If you did just to eat one, it would only have 43 calories.  They are also packed with protein and almost fat free!
They are like potato chips though, you really can't eat just one!

Protein Zucchini Muffins

  • 2 small zucchini (roughly 230g)
  • 6 T egg substitute (92g)
  • 1/8 c oat bran (20g)
  • 1 scoop vanilla protein powder (30g)
  • 1/2 t vanilla 
  • 1/2 t baking powder
  • 1 t cinnamon
  • dash of salt
  • sweetener to taste

  • 1. Grate zucchini as fine as possible.  Get as dry as possible (squeeze between paper towel)
    2. In a bowl mix together everything except zucchini.
    3. Once mixture is smooth, add grated zucchini.
    4. Pour mixture into muffin pan or bread pan.
    5. For muffins, bake at 350 for 20-25 minutes

    Makes 6 muffins - 43 calories each
    260 calories for the whole batch
    2g Fat
    21g Carb
    40g Protein

    1. Hi there! I'm definitely going to try this recipe. However, quick question about the baking temp..is it supposed to be 350 F vs. 150 F as listed? My oven only goes down to 170 F. Thank you!
