Chocolate Bread Pudding

I absolutely love when people message me and ask if I will give one of their favorite recipes a makeover!! I recently had someone ask if I would try making a chocolatey caramely bread pudding.  Sounded pretty tasty to me! I was up for the challenge.  I am extremely happy to say that it turned out amazing! Only took me one try too!
Goodness gracious!!

Ingredients are pretty simple...
Any type of bread, egg substitute, unsweetened applesauce, sugar free fat free butterscotch pudding mix, chocolate protein powder, vanilla, chocolate chips, and sweetener if desired.

You can use any brand of chocolate protein, but I cannot guarantee the results.  I highly recommend baking with MTS whey.

Cut the bread into cubes and set aside.
I consider this dish one serving, but you can easily double, triple, or even quadruple the recipe if you want to make a dish to share!

Mix everything else except the chocolate chips together in a separate bowl. 
Pour the mixture over the bread and gently stir until the bread is evenly coated.  Pour into a sprayed baking dish.  It can be a circle, oval, square, rectangle, or even pineapple shaped for all I care! 
Sprinkle as much or as little chocolate chips on top as you like!
Ready for the oven! 350 for about 25-30 minutes.  This one took 28 minutes.  Baking time will vary depending on the size and shape of your dish. 

I was so excited when I took it out of the oven! It looked and smelled amazing!
I hardly even waited for it to cool at all before I dug in! Heavenly!

Seriously! It is chocolatey, creamy, sweet, and so soft and gooey from the pudding.  Such a great chocolate dessert! The whole dish is only about 360 calories plus almost 30 grams of protein! Not too shabby!
I started to think of the other flavor combinations you could do just by changing the pudding and protein powder flavors! For example...

Vanilla pudding & cake batter protein
Cheesecake pudding & red velvet protein
Chocolate pudding & cookies and cream protein
White chocolate  pudding & peanut butter protein
Pistachio pudding & vanilla protein
Banana cream pudding & chocolate protein

I am pretty sure those are all the flavors of sugar free fat free pudding mix...but the flavor possibilities are endless! Not to mention trying peanut butter chips, white chocolate chips, or even toffee chips!

I am definitely going to be trying white chocolate pudding with peanut butter protein and peanut butter chips very very soon!! Til then I will just enjoy this masterpiece :)

Chocolate Bread Pudding
  • 2 slices of bread (any kind)
  • 1 scoop MTS Chocolate whey (30g)
  • 1/4 package sugar free fat free butterscotch pudding mix (8g)
  • 3 T egg substitute (46g)
  • 3/4 cup unsweetened applesauce (165g)
  • 1/2 t vanilla
  • sweetener to taste
  • 1 T chocolate chips (14g)
1. Cut bread into cubes and set aside.
2. Mix everything else except chocolate chips together in a separate bowl.
3. Pour mixture over bread and stir gently til bread is coated.
4. Sprinkle chocolate chips on top.
5. Bake at 350 for 25-30 minutes.

Entire dish - 405 calories
8g Fat
59g Carb
33g Protein

    1. 23 grams in this exact recipe. The type of bread and protein powder you use will change it.
