Peanut Butter Cup Blizzard

I scream, you scream, we all scream for ice cream! Not many things taste better than a cold and creamy ice cream blizzard on a hot summer day.  While there is absolutely nothing wrong enjoying a DQ frozen treat, it isn't really something you will want to eat everyday...I am going to show you a super tasty Peanut Butter Cup Blizzard that you can eat everyday without guilt!
Looks pretty awesome right?! I bet you can't even tell that it is low fat and high protein!

I combined two of my favorite products from two of my favorite companies for this bowl of yum.
Quest and MTS! High protein peanut butter cups and extra protein from peanut butter fluff whey.

You will need a few other ingredients as well.
Of course you need the ice cream, but Reddi Whip and chocolate sauce are completely optional.  I am using Turkey Hill no sugar added Vanilla Bean ice cream.  Highly recommend this brand! It doesn't taste low sugar or fat free at all!

Open up your peanut butter cups.  I know it will be hard, but don't eat them yet!!
Side note...these are great on their own right out of the freezer!

Chop them up!
I like really big chunks, but make them whatever size you want.

You could just add one peanut butter cup, but I used both for my blizzard.
I guess you could add one and eat one...so good!

Serve up the ice cream!
One serving is all I needed.  You could use any flavor too! Try a chocolate peanut butter blizzard!

Add 1/2 scoop protein powder to the ice cream and mix it up.  The protein makes the blizzard extra thick! I love having one of these after a workout!
Stir in the peanut butter cup chunks and stick back in the freezer for a bit.

Get whatever toppings your little heart desires! I kept it somewhat simple with the Reddi Whip and sugar free chocolate syrup.
Yea, it tastes as good as it looks! This bowl of peanut butter protein goodness is much better for you than any blizzard you will buy at a fast food restaurant!

Make sure you get some of everything in each bite!
YUM!!

Protein Ice Cream

I scream, you scream, we all scream for ice cream!! Well, how about some healthy ice cream?! Yes, there is such things.  I am talking about a HUGE bowl with only 140 calories AND 44 grams of protein.  It tastes good too!! And there are soooo many flavor possibilities! Take a look at that bowl!
FYI...that is not a small bowl! That is a mixing bowl! Which is overflowing...with goodness...

Ok, ingredients you will need are:
Protein powder of your choice.  Casein or whey will work, any flavor at all!! I am using vanilla ice cream because it seems appropriate! Milk, I am using my favorite unsweetened almond milk :) The magical ingredient - xanthan gum!! You can find this at most grocery stores in the gluten free or baking section.  Go get some!!! Also, any other flavorings you want to add.  I am using some sugar free english toffee syrup.  You could add vanilla, unsweetened cocoa powder, cinnamon....whatever!!

You also need a decent blender that can at least blend ice! I got everything nicely measured out.  1 scoop protein powder (30g), 1/2 cup milk (120ml), and 1/2 t xanthan (2g).
Throw all that into your blender along with any other flavorings you wish.  I also added some wonderful cancerous Splenda!
You can add as much ice as you want.  I use about 4 cups.  Just wait til you see what the magical xanthan gum does to this!!

You may also need to add a little water or extra milk to get it all mixed smoothly.  Once you get a good consistency, turn the blender on high and let it blend for 10-15 minutes.
I know I know, that's a long time to blend...trust me!!!
MAGIC!! Remember how we started at 4 cups?? Now we have 9 cups of ice cream!!!!
That is what xanthan gum does! Volume!!!! I believe McDonald's uses it in their milkshakes...but this is waaaay healthier than anything from that place!

Scavenge your cupboard for a bowl big enough to fit all this goodness...
Mixing bowl it is...

Time for toppings!!! Can't have ice cream without toppings right?? You can add basically anything you can think of! Sprinkles, chocolate chips, chocolate syrup, caramel sauce, whipped cream, fruit, nuts...
I am keeping them calories low so Walden Farms it is! If you never heard of these before I can't be your friend you should try them! A little pricey but they are calorie free!! Gotta love fat free Reddi wip too!
Woah!!! I don't know if you remember or not, but this whole bowl is only 140 calories!!! Maybe 145 with the whipped topping...Plus 25 grams of protein! What?! Now that is a dessert.
Oh my....And this dessert will fill you up!! Volume + protein = fullness!

Protein Ice Cream
  • 1 scoop protein powder (30g)
  • 1/2 cup unsweetened almond milk (120ml)
  • 1/2 t xanthan gum (2g)
  • other flavorings...syrups, spices...
  • sweetener to taste
Add all ingredients to blender.  Add some water if necessary to blend smooth.  Put blender on high for 10-15 minutes.  Eat all the ice cream!!! Top with whatever!!

Protein Fluff!

Ya know how sometimes you are in the mood for something cold and creamy and tasty?! BUT you want more than a tiny little scoop of it?! AND you want it to actually be good for you?! Problem solved! I give you Protein Fluff!!
This creation truly is magical. You will be amazed when you see how much volume you get from so little ingredients.  All you need is any kind of milk, any protein powder, and the magical xanthan gum.  You can find xanthan gum at most normal grocery stores in the baking aisle and sometimes in the gluten free section.  I am not exactly sure what it is, but it is basically a thickening agent.  It is used in milkshakes a lot to make them super duper thick!

Measure out 1/2 cup (4oz) of your milk of choice.  I use unsweetened almond milk because it has less calories and I really like the taste. You will also need 1 scoop of your protein powder and 1 tsp of the xanthan gum.
You can use absolutely any flavor of protein powder.  I used a vanilla ice cream flavor this time. I have used cookies and cream, chocolate, vanilla, cake batter...I have only ever used whey protein, but I have been told any type will work.  In fact, I hear casein fluffs up the best!

Add everything to your mixer and set it to HIGH! A hand mixer will work but you will get pretty tired holding it because we are going to mix for 15 minutes! A hand whisk is out of the question...unless you are the Hulk...
You can also add some sweetener and any other flavors you might enjoy.  I added some splenda and cinnamon to this batch.
It is best not to watch it...it is more magical that way.  Just set it to high and set your timer for 15 minutes.

When the timer goes off prepare to be amazed!
Now that is a lot of fluff!! It is basically a whipped cream texture. Very light and airy.
Check out those peeks!!
Scoop it all into a bowl and stick it in the freezer for about 15 minutes so it gets nice and cold. Then it's ready to be devoured!! Whole bowl is less than 150 calories and an amazing 25 grams of protein!
It is great just plain, but I usually like to jazz it up a bit.  Add some fruit, chocolate sauce, sugar free syrup, peanut butter, nuts, sprinkles...Basically whatever you would put on ice cream!

My favorite combo is just frozen banana slices and sugar free syrup :)

Protein Fluff

  • 1 scoop any flavor protein powder (30g)
  • 1/2 cup unsweetened almond milk (or any milk) (4oz)
  • 1 t xanthan gum (3g)
  • sweetener to taste
  • Electric mixer
Add your ingredients to the mixer and set on the highest speed.  Let mix for 10-15 minutes.  Scoop fluff into a bowl and stick in the freezer for another 15minutes.  Top with ANYthing and enjoy :)
