No Bake Cookies

I always loved making No Bake Cookies as a kid! We were actually allowed to make them on our own because we didn't need an oven! Of course we didn't actually measure everything correctly, but the end product was usually at least edible! 

As soon as MTS Nutrition came out with No Bake Cookie flavored whey, I knew exactly what I wanted to make! 
Yum!!

Ingredients are slightly different from what you use for your normal no bake cookies.
MTS No Bake Cookie Whey, quick oats, peanut butter, sugar free syrup, unsweetened applesauce, unsweetened vanilla almond milk, vanilla, and sweetener of choice.  

You can experiment with other flavors and brands of whey.

Any kind of peanut butter or nut butter will work. I went with good old Smooth Operator.  
Feel free to play around with some fun flavors! You could even try PB2 for a lower fat option. 

Melt the peanut butter, applesauce, milk, syrup, and vanilla on the stove top.
Cook on low for just a few minutes until everything is blended.  

Stir in your protein powder and sweetener of choice.  
Depending on the type of peanut butter and protein, you may not even want the additional sweetness. I added one Splenda packet.  

Remove from heat and mix in the oats.  If needed, add a little additional liquid so you can completely coat the oats.  
It should be thick and sticky! Feel free to add in some cinnamon, cocoa powder, or any other fun seasonings.  

Drop the batter onto a cookie sheet lined with parchment paper. I got one dozen cookies from this batch.  
Press them down a bit and stick them in the fridge for about an hour.  

There you have some scrumptious, protein packed cookies!! 
These are great for breakfast!! Like eating a bowl of hearty oatmeal, but in cookie form! 

Store any leftovers in the fridge.  They will keep for about a week.  Honestly though...they will be in your belly before then! 
You can keep these cookies simple...

Or get a little more creative!! 
I added some raisins to the batter and a few chips in the middle! Mini chips, white chocolate, and butterscotch! Like little bird's nests!

No Bake Cookies
  • 1 scoop MTS No Bake Cookie Whey (30g)
  • 1 1/2 cup quick oats (120g)
  • 4 T peanut butter (64g)
  • 2 T unsweetened vanilla almond milk (30ml)
  • 2 T sugar free syrup (30ml)
  • 1/4 cup unsweetened applesauce (56g)
  • 1 t vanilla
  • sweetener to taste (1-2 packets)
  1. Melt peanut butter, applesauce, syrup, milk, and vanilla on low heat
  2. Stir in protein powder
  3. Remove from heat and stir in oats
  4. Line baking sheet with parchment paper and drop batter
  5. Press cookies down a bit and place in fridge for 1-2 hours
  6. Store uneaten cookies in the fridge for about a week
Makes 12 cookies
Per cookie - 80 calories 3.5F 9C 4P
For entire batch - 970 calories 42F 107C 49P

Butternut Squash Cookies

Fall is coming! Fall is coming!! I love everything about Fall.  The smells, the colors, and the food! I know the pumpkin craze always takes over, but what about the squash craze?! 
Butternut Squash Cookies! That's what I'm talkin about!

These couldn't be easier to make.  You will need the following:
MTS Vanilla whey, frozen squash puree, egg substitue, any type of flour, vanilla, cinnamon, baking powder, and sweetener of choice.  
*Of course you can use fresh squash. Just chop it up, steam, and puree*
*Feel free to try other brands of protein, but I cannot guarantee the same results*

 Any type of flour will work for this recipe.  I really like using oat flour.  Don't waste your money buying it from the store though! 
Just take some regular oats and grind them in a blender or food processor.  Ta-Da! Oat flour.

If you are using the frozen squash, we gotta defrost it somehow.  You can microwave it, cook it, or just sit in in a tupperware overnight.  
I like to cook it on the stove because it seems to get rid of some of the extra water and moisture.  

You could even use baby food for this recipe! 
That is basically what we have here...

Stir in the rest of your ingredients.  
Feel free to add other spices such as nutmeg, ginger, or cloves.  You could also add some dark chocolate or white chocolate chips! Maybe some raisins or nuts? Get creative! I bet cinnamon protein powder would be super tasty too.

The batter will be pretty wet so we are just going to do drop cookies on the baking mat.  
If you don't have a silicon baking mat, parchment paper will work.  If you must use non stick spray be sure to coat that pan very well!

Into the oven which is preheated at 350 for about 15 minutes. 
Ahh...the house smells like Fall wonderfulness! 

Wanna know the best part about these cookies?! Not only are they super tasty, but they are also super healthy! Yup, all 12 cookies for only 245 calories.  
You also get 3g Fat, 29g Carb, and 24g Protein.  

They are super soft from the squash.  The cinnamon and vanilla go great with the flavor of the butternut squash.  
These would be fantastic with a little fat free cream cheese or peanut butter in between two cookies! 

Honestly, they don't even need anything extra though.  They are perfection! 
Are you thinking what I'm thinking?! Cookies for breakfast again! Go ahead and make a double batch because these guys freeze great! I have two bags in my freezer right now waiting to be devoured this week.

 If you have never tried baking with protein powder, what are you waiting for?! It is such a great way to get some more protein in your diet.  It can be a good sub for flour in a lot of recipes too!

Butternut Squash Cookies

  • 1 cup butternut squash puree (240g)
  • 1 scoop MTS vanilla whey (30g)
  • 1/4 cup oats (ground to flour) (20g)
  • 1 T egg substitute (15g)
  • 1 t cinnamon
  • 1/2 t baking powder
  • 1/2 t vanilla
  • sweetener to taste
  1. Cook/thaw frozen squash. If using fresh squash, chop it up, steam, and puree.
  2. Mix together all ingredients
  3. Drop batter onto baking mat or parchment paper.
  4. Bake at 350 for 15 minutes.
Makes 12 cookies
245 calories for entire batch

MTS Whey

Anyone that follows my blog or YouTube channel knows that I use a lot of protein powder in my recipes! I am a vegetarian and it is sometimes difficult to make sure I have enough protein in my diet.  High protein cookies, muffins, and pancakes are the perfect way for me to meet my protein goals each day.  With all the different protein powder brand out there, you may be wondering what my favorite kind is! 

I have tried a lot of different brands! Some of those include Jay Robb, Abouttime, Dymatize, FitMiss, Muscle Milk, Gold Standard, and Isopure.  They have all been good, but nothing compared to MTS!
In my opinion, MTS Nutrition has the best protein powder.  It tastes great and bakes great too!  Right now they carry five different flavors.  I hear they are coming out with two new ones very soon though! I am super excited about that!

The flavors include Chocolate, Vanilla, Cookies & Cream, Peanut Butter Fluff, and Caramel Sutra.  

The Cookies & Cream is hands down the best tasting protein powder I have ever had!
 Just mixed with water, this shake tastes like liquid Oreos! No joke! 
One scoop has 153 calories 3.5F 6C 25P.

Peanut Butter Fluff would have to be my second favorite.  Also makes a super tasty shake! Anything peanut buttery is always a winner in my book.  
One scoop is 140 calories 2F 4C 25P.  I really love how this protein has a whopping 25 grams of protein per scoop! The main reason I use protein powder is obviously for the protein so the more the merrier!

Caramel Sutra is probably tied for second, but since it is newer, I haven't been able to experiment with it quite as much.  How amazing does caramel protein sound?!
Ya, it tastes amazing too! Not too sweet, but you can defiantly taste the caramel goodness.  One scoop is 150 calories 2F 4C 25P. 

You gotta love the classics.  Chocolate and Vanilla.  
The Chocolate has such a great flavor.  Nice and smooth.  All of the powders dissolve great which is very important to me.  Nobody likes a clumpy lumpy shake! One scoop gives you 150 calories 4F 5C 25P.  I love how all the flavors are very low in fat and carbs.  

One scoop of Vanilla has 150 calories 3.5F 5C 25P.  This might be my favorite flavor to bake with.
  Not too sweet, not artificial tasting at all, and you can mix it with just about anything!! I have used it in sweet and savory dished and they have all been great!

Peanut Butter Marshmallow Cookies!  The best part is that these cookies are high protein and good for you! You can have all 8 cookies for only 237 calories 2F 25C 28P! Yup, cookies for breakfast again. 

I love combining two of my favorite things! Quest and MTS!!
In just a few easy steps you can have yourself a healthier  Peanut Butter Blizzard!
1. Mix some vanilla ice with a scoop of Peanut Butter Fluff whey. 
2. Break up a Quest Peanut Butter Cup and stir in the pieces.  
3. Top with a little sugar free chocolate sauce.

I could keep going with the Peanut Butter Fluff, but let's move on to the Chocolate! Since I still have peanut butter on the brain, let's combine some Chocolate whey with some flavored peanut butter and makes some Chocolate Peanut Butter Cookies
In case you had any doubt, peanut butter and chocolate go together like peas and carrots! Only much better because peanut butter and chocolate are better than veggies... Yup, I got the recipe for you right here!
Lots of different variations with this recipe too! Try all different flavors of peanut butter and protein! Endless possibilities! 

Bored with just drinking that post workout shake? How about some post workout Chocolate Peanut Butter Bark?!
So simple!
1. Mix one scoop Chocolate whey with enough water to make a pudding consistency.
2. Stir in one serving of cereal.
3. Place on parchment and freeze.
4. Eat!!

One of my favorite recipes is made with the Caramel Sutra.
All 6 bars are 345 calories 8F 38C 33P.  I am loving those macros! 

Last but certainly not least, let's make something with my favorite Cookies & Cream!
Yup! More cupcakes! Does it get much better than Cookies & Cream Cupcakes!? No, no it doesn't!

Peanut Butter Cup Blizzard

I scream, you scream, we all scream for ice cream! Not many things taste better than a cold and creamy ice cream blizzard on a hot summer day.  While there is absolutely nothing wrong enjoying a DQ frozen treat, it isn't really something you will want to eat everyday...I am going to show you a super tasty Peanut Butter Cup Blizzard that you can eat everyday without guilt! 
Looks pretty awesome right?! I bet you can't even tell that it is low fat and high protein! 

I combined two of my favorite products from two of my favorite companies for this bowl of yum.
Quest and MTS! High protein peanut butter cups and extra protein from peanut butter fluff whey. 

You will need a few other ingredients as well.
Of course you need the ice cream, but Reddi Whip and chocolate sauce are completely optional.  I am using Turkey Hill no sugar added Vanilla Bean ice cream.  Highly recommend this brand! It doesn't taste low sugar or fat free at all!

Open up your peanut butter cups.  I know it will be hard, but don't eat them yet!!
Side note...these are great on their own right out of the freezer!

Chop them up!
I like really big chunks, but make them whatever size you want.  

You could just add one peanut butter cup, but I used both for my blizzard.
I guess you could add one and eat one...so good!

Serve up the ice cream!
One serving is all I needed.  You could use any flavor too! Try a chocolate peanut butter blizzard!

Add 1/2 scoop protein powder to the ice cream and mix it up.  The protein makes the blizzard extra thick! I love having one of these after a workout! 
Stir in the peanut butter cup chunks and stick back in the freezer for a bit.

Get whatever toppings your little heart desires! I kept it somewhat simple with the Reddi Whip and sugar free chocolate syrup.
Yea, it tastes as good as it looks! This bowl of peanut butter protein goodness is much better for you than any blizzard you will buy at a fast food restaurant!

Make sure you get some of everything in each bite!

Peanut Butter Cup Blizzard
  • 1 package Quest Peanut Butter Cups
  • 1/2 scoop MTS peanut butter fluff whey (15g)
  • 1/2 cup fat free vanilla bean ice cream (68g)
  • 1 T sugar free chocolate syrup (7g)
  • 2 T fat free Reddi Whip (5g)
  1. Chop up peanut butter cups and set aside.
  2. Mix together protein powder and ice cream.
  3. Stir in peanut butter cup chunks. 
  4. Put in freezer for a bit to let it set up.
  5. Add whatever toppings you like or just eat as is!!
