Cheesecake Pumpkin Dip

Pumpkin sure does take over in the Fall!! Pumpkin cookies, pancakes, coffee, candy, and more! One of my favorite pumpkin flavored things lately is my Cheesecake Pumpkin Dip!
So easy! So delicious! And it's even pretty good for you!

Like I said...easy peasy...
MTS Caramel Sutra whey, cheesecake sugar free fat free pudding mix, canned pumpkin, unsweetened vanilla almond milk, and cinnamon.
*Feel free to use different protein and pudding flavors*

This could not be less complicated!
Just add all the ingredients in a bowl and mix! I use a whisk to make sure it's super smooth!

Refrigerate it for about 20 minutes to let it thicken up and then dig in!
I love it with pretzels! They are probably my favorite dippers!

Pumpkin dip and apples are such a great snack!!
Since there is 25 grams of protein in there, it's a great before or  after a workout! Try spreading it on bagel or toast instead of cream cheese!

Perfect for a party or get together! You could get super creative and put the dip in a hollowed out pumpkin!

Cheesecake Pumpkin Dip
  • 1 scoop MTS Caramel Sutra Whey (30g)
  • 1 cup canned pumpkin (240g)
  • 1/2 package sugar free fat free cheesecake pudding mix (16g)
  • 1/4 cup unsweetened vanilla almond milk (60ml)
  • 1 t cinnamon
  • sweetener to taste (1-2 packets)
  1. Mix all ingredients in a bowl til smooth
  2. Serve with pretzels, fruit, crackers, or a spoon. Also makes a great bagel spread!
  3. Store in refrigerator

Butternut Squash Pancakes

I am so in love with pancakes lately! They are great because you can literally make them in any flavor.
One of my favorites is Butternut Squash Pancakes!

Easy to make, delicious to eat, and healthy too!
You will need MTS Caramel Sutra Whey, cooked winter squash, egg substitute, cinnamon, baking powder, vanilla, and sweetener of choice.
*Feel free to use fresh squash.  Just chop it up, steam, and puree*
Frozen is just so easy!!

 Feel free to try other brands and flavors of protein, but I love using MTS Whey.

If you are using the frozen squash puree, just cook it according to the package.  I usually cook mine on the stove top.  If you microwave it, you may need to drain the excess liquid.  
Stir in the rest of your ingredients. 

Get your skillet nice and hot.  I use the medium setting.  
Be sure to coat your pan with nonstick spray very well! Otherwise these guys will stick!

They won't bubble like regular pancakes do when ready to flip.  Just test the edge to see if they are golden brown.  
It is best to cook them slower on medium heat.  You don't want to burn the outside and them raw in the middle.

These are the perfect Fall breakfast! I love the cinnamon, caramel, and squash combo! 

The best part is that they are crazy good for you! 
High protein, low carb, and low fat.  Packed with nutrients from the squash! You just can't beat it!

Butternut Squash Pancakes
  • 1 cup butternut squash puree (230g)
  • 1 scoop MTS Caramel Sutra Whey (30g)
  • 1 T egg substitute (15g)
  • 1/2 t vanilla
  • 1/2 t baking powder
  • 1 t cinnamon
  • sweetener to taste (3 packs)
  1. Cook the frozen squash according to package.  I prefer to cook it on the stove top. If using fresh squash, just chop it up, steam, and puree.
  2. Mix together all the ingredients. 
  3. Cook on medium heat.  Use nonstick spray and don't flip too soon!!
  4. Enjoy!

Caramel Butterscotch Blondies

Caramel, butterscotch, and white chocolate...do I need to say anything else?! Didn't think so!
Let's get baking! 

You will need...
MTS Caramel Sutra whey, garbanzo/chick peas, canned pumpkin, egg substitute, vanilla, baking powder, sweetener, white chocolate chips, and butterscotch chips.
*If you don't have MTS caramel whey, you could sub any vanilla protein powder*
*Any white bean will work*

Add your beans, egg, and vanilla to a blender and puree.
If you need to, you can add a little water, milk, or more egg to get everything to blend smoothly. 

Stir in everything but the chips.  Pour batter into a sprayed baking dish.  I used a 5x7 dish which gives the bars a perfect thickness.  If you use a bigger pan you will just have to adjust the baking time.  Feel free to double the recipe to make more!
Add as much white chocolate and butterscotch chips as you like!! You could even mix some in the batter.  Into the oven at 350 for 2-25 minutes.

Shh...I snuck a handful or two to snack on while the bars were baking...
Feel free to get creative! You can add dark chocolate, milk chocolate, nuts...

I love how the chips get a little melty on top!
Now, would you believe me if I told you that this whole dish is only 345 calories?! 

Well you should because I never rarely tell a lie!
Yup, not only are these bars delicious and easy to make, they are also good for you!

I will easily eat all 6 bars for breakfast! The entire batch will give you 8F 38C 33P.
That means each bar is only about 58 calories! If you can stop after just one, you have some crazy good will powder!

Caramel Butterscotch Blondies
  • 1 scoop MTS caramel sutra whey (30g)
  • 1/2 cup chickpeas (130g)
  • 1/4 cup canned pumpkin (60g)
  • 3 T egg substitute (46g)
  • 1 t vanilla
  • 1/2 t baking powder
  • sweetener to taste (4-5 packets)
  • 1 T butterscotch/white chocolate chips (14g)
  1. Drain and rinse beans
  2. Puree beans, egg and vanilla
  3. Add everything else except chips
  4. Pour batter into sprayed baking dish
  5. Sprinkle chips on top
  6. Bake at 350 for 20-25 minutes
Makes 6 bars - 58 calories each
Entire batch - 345 calories

38g Carb 
33g Protein

MTS Whey

Anyone that follows my blog or YouTube channel knows that I use a lot of protein powder in my recipes! I am a vegetarian and it is sometimes difficult to make sure I have enough protein in my diet.  High protein cookies, muffins, and pancakes are the perfect way for me to meet my protein goals each day.  With all the different protein powder brand out there, you may be wondering what my favorite kind is! 

I have tried a lot of different brands! Some of those include Jay Robb, Abouttime, Dymatize, FitMiss, Muscle Milk, Gold Standard, and Isopure.  They have all been good, but nothing compared to MTS!
In my opinion, MTS Nutrition has the best protein powder.  It tastes great and bakes great too!  Right now they carry five different flavors.  I hear they are coming out with two new ones very soon though! I am super excited about that!

The flavors include Chocolate, Vanilla, Cookies & Cream, Peanut Butter Fluff, and Caramel Sutra.  

The Cookies & Cream is hands down the best tasting protein powder I have ever had!
 Just mixed with water, this shake tastes like liquid Oreos! No joke! 
One scoop has 153 calories 3.5F 6C 25P.

Peanut Butter Fluff would have to be my second favorite.  Also makes a super tasty shake! Anything peanut buttery is always a winner in my book.  
One scoop is 140 calories 2F 4C 25P.  I really love how this protein has a whopping 25 grams of protein per scoop! The main reason I use protein powder is obviously for the protein so the more the merrier!

Caramel Sutra is probably tied for second, but since it is newer, I haven't been able to experiment with it quite as much.  How amazing does caramel protein sound?!
Ya, it tastes amazing too! Not too sweet, but you can defiantly taste the caramel goodness.  One scoop is 150 calories 2F 4C 25P. 

You gotta love the classics.  Chocolate and Vanilla.  
The Chocolate has such a great flavor.  Nice and smooth.  All of the powders dissolve great which is very important to me.  Nobody likes a clumpy lumpy shake! One scoop gives you 150 calories 4F 5C 25P.  I love how all the flavors are very low in fat and carbs.  

One scoop of Vanilla has 150 calories 3.5F 5C 25P.  This might be my favorite flavor to bake with.
  Not too sweet, not artificial tasting at all, and you can mix it with just about anything!! I have used it in sweet and savory dished and they have all been great!

Peanut Butter Marshmallow Cookies!  The best part is that these cookies are high protein and good for you! You can have all 8 cookies for only 237 calories 2F 25C 28P! Yup, cookies for breakfast again. 

I love combining two of my favorite things! Quest and MTS!!
In just a few easy steps you can have yourself a healthier  Peanut Butter Blizzard!
1. Mix some vanilla ice with a scoop of Peanut Butter Fluff whey. 
2. Break up a Quest Peanut Butter Cup and stir in the pieces.  
3. Top with a little sugar free chocolate sauce.

I could keep going with the Peanut Butter Fluff, but let's move on to the Chocolate! Since I still have peanut butter on the brain, let's combine some Chocolate whey with some flavored peanut butter and makes some Chocolate Peanut Butter Cookies
In case you had any doubt, peanut butter and chocolate go together like peas and carrots! Only much better because peanut butter and chocolate are better than veggies... Yup, I got the recipe for you right here!
Lots of different variations with this recipe too! Try all different flavors of peanut butter and protein! Endless possibilities! 

Bored with just drinking that post workout shake? How about some post workout Chocolate Peanut Butter Bark?!
So simple!
1. Mix one scoop Chocolate whey with enough water to make a pudding consistency.
2. Stir in one serving of cereal.
3. Place on parchment and freeze.
4. Eat!!

One of my favorite recipes is made with the Caramel Sutra.

Last but certainly not least, let's make something with my favorite Cookies & Cream!
Yup! More cupcakes! Does it get much better than Cookies & Cream Cupcakes!? No, no it doesn't!

Caramel Pumpkin Bars

Recently I have been experimenting with chickpeas in the kitchen.  Not so much in savory dishes, but in baking sweets! That's right, chickpea cookies and chickpea blondies.  You wouldn't think a bean would taste good in a sweet treat, but it is quite amazing! They have a really nice and smooth texture when pureed.  And when you add things like pumpkin, vanilla, cinnamon, peanut butter, you can't even tell there are chickpeas hiding in there! 
My husband, who is NOT the health freak like myself, even said they tasted good!!  I think he was quite surprised himself.

Enough rambeling...Let's get baking some Caramel Pumpkin Bars.  
WHEN you make these, see if someone can guess the secret healthy ingredient...I bet they won't be able to tell there is a 1/2 cup of chickpeas in there!!!

 And you will need...canned pumpkin, chickpeas (or garbanzo), egg beaters, MTS Caramel Sutra whey, cinnamon, baking powder, vanilla, and sweetener of choice.

Easy peasy lemon squeezy!! 
First, drain and rinse the canned beans. You will find out that after getting rid of all the liquid, there is only a little over 2 servings of beans in the can.

Add all ingredients to blender or food processor and mix til smooth!! You may or may not need a tiny bit of water or milk to get it all blended.  I added about 1tsp of water to help it along.  
Once again...looks like baby food...at this point my husband walks in and says "Ew.." The same husband that later said they were suprisingly tasty!!
I used a small 5x7 glass baking dish.  You could use a round one, or easily double the recipe to fit a bigger dish.  I have also made these as cookies! They are best as bars in my opinion. Lightly coat with some non-stick spray and pour the batter in.  At this point you could get creative! I have added mini chocolate chips which turned out awesome! You could add any type of nut and I bet raisins would be tasty too!
Bake at 350 for about 20-25 minutes.  
And Voila!  Makes 6 nice sized bars.  The pumpkin in these makes them the perfect texture. They are amazing topped with a little cream cheese or peanut butter! Or just eat them plain.  Delicious AND healthy either way.  
Can you see that super creamy texture!? Oh gosh! Like most things I make these freeze great.  Although, at only about 45 calories a piece...they probably won't even make it to the freezer.  Who am I kidding...the whole batch is only 270 calories so I just eat them all! With more protein than most store bought protein bars, these are a great breakfast or snack!

Caramel Pumpkin Bars
  • 1/2 cup chickpeas/garbanzo drained and rinsed (130g)
  • 1/4 cup canned pumpkin (60g)
  • 3 T egg beaters (46g)
  • 1 scoop MTS Caramel Sutra whey (30g)
  • 1/4 t baking powder
  • 1 T cinnamon
  • sweetener to taste (4-5 packets)
  1. Drain and rinse the chickpeas. Add all ingredients to a blender or food processor and puree until smooth.  May need to add a dash of water or milk to get it all mixed.  
  2. Lightly coat dish with non stick spray and pour in batter. I used a 5x7 glass dish.
  3. Bake at 350 for 20-25 minutes. 
Makes 6 bars - 45 calories each
