Sweet Potato Muffins

Sweet potatoes are delicious! There is so much you can do with them too! Steam them, cover them in peanut butter, mash them, make sweet potato fries, or bake them into something wonderful! 
You are going to love these cinnamon-y Sweet Potato Muffins!

Simple and delicious! Those are really the only requirements for my baking! Doesn't hurt that they are good for you too! Ingredients needed are...
MTS Peanut Butter Fluff Whey, one medium sweet potato, egg substitute, cinnamon, vanilla, baking powder, and sweetener of choice.

Feel free to try other brands or flavors (cinnamon, vanilla, caramel...)

Start by peeling your sweet potato. 
Make sure to use a super cute potato peeler...

Chop it up! 
Try to keep the pieces about the same size so they cook evenly.

I love using my veggie steamer!
It's ok if you don't have one.  Just boil them on the stove top like you would regular potatoes.  You just want to get them nice and soft.  

Add the steamed sweet potato, egg, and vanilla to your food processor or blender.  
Make sure it is nice and creamy.  If needed, you can add a little more egg or some milk to help puree.  

Stir in remaining ingredients. 
Feel free to add some nuts or dark chocolate! Both are super yummy add ins!

Fill muffin cups almost to the top.  The muffins won't rise very much at all.  
Bake at 350 for 28 minutes.
 Your house is going to smell amazing! Cinnamon, peanut butter, and sweet potato goodness!

The best part? 
All six muffins are only 270 calories! Yes, you get to eat them all for breakfast!

They are also packed with protein so they will get your morning off to a great start.
Doesn't hurt that they are gluten free and contain no added sugar and no flour!
*Be sure to double check your protein powder if you have a gluten intolerance*

These are perfect for Fall!
I also enjoy them in the Spring, Summer, and Winter!

 Sweet Potato Muffins
  • 1 medium sweet potato (1 cup / 200g puree)
  • 1 scoop MTS Peanut Butter Fluff Whey (30g) (can try other flavors/brands)
  • 2 T egg substitute (30g)
  • 1/2 t vanilla
  • 1/2 t baking powder
  • 1 t cinnamon
  • sweetener to taste (I use 4 packets)
  1. Peel sweet potato
  2. Chop sweet potato into small cubes and steam til very soft
  3. Puree sweet potato, egg, and vanilla (add a little milk if necessary to blend smooth)
  4. Stir in remaning ingredients
  5. Fill muffins cups almost to the top (won't rise much)
  6. Bake at 350 for 28 minutes
Makes 6 Muffins
Whole batch - 270 calories

35g Carb
26g Protein

Peanut Butter Cup Blizzard

I scream, you scream, we all scream for ice cream! Not many things taste better than a cold and creamy ice cream blizzard on a hot summer day.  While there is absolutely nothing wrong enjoying a DQ frozen treat, it isn't really something you will want to eat everyday...I am going to show you a super tasty Peanut Butter Cup Blizzard that you can eat everyday without guilt! 
Looks pretty awesome right?! I bet you can't even tell that it is low fat and high protein! 

I combined two of my favorite products from two of my favorite companies for this bowl of yum.
Quest and MTS! High protein peanut butter cups and extra protein from peanut butter fluff whey. 

You will need a few other ingredients as well.
Of course you need the ice cream, but Reddi Whip and chocolate sauce are completely optional.  I am using Turkey Hill no sugar added Vanilla Bean ice cream.  Highly recommend this brand! It doesn't taste low sugar or fat free at all!

Open up your peanut butter cups.  I know it will be hard, but don't eat them yet!!
Side note...these are great on their own right out of the freezer!

Chop them up!
I like really big chunks, but make them whatever size you want.  

You could just add one peanut butter cup, but I used both for my blizzard.
I guess you could add one and eat one...so good!

Serve up the ice cream!
One serving is all I needed.  You could use any flavor too! Try a chocolate peanut butter blizzard!

Add 1/2 scoop protein powder to the ice cream and mix it up.  The protein makes the blizzard extra thick! I love having one of these after a workout! 
Stir in the peanut butter cup chunks and stick back in the freezer for a bit.

Get whatever toppings your little heart desires! I kept it somewhat simple with the Reddi Whip and sugar free chocolate syrup.
Yea, it tastes as good as it looks! This bowl of peanut butter protein goodness is much better for you than any blizzard you will buy at a fast food restaurant!

Make sure you get some of everything in each bite!

Peanut Butter Cup Blizzard
  • 1 package Quest Peanut Butter Cups
  • 1/2 scoop MTS peanut butter fluff whey (15g)
  • 1/2 cup fat free vanilla bean ice cream (68g)
  • 1 T sugar free chocolate syrup (7g)
  • 2 T fat free Reddi Whip (5g)
  1. Chop up peanut butter cups and set aside.
  2. Mix together protein powder and ice cream.
  3. Stir in peanut butter cup chunks. 
  4. Put in freezer for a bit to let it set up.
  5. Add whatever toppings you like or just eat as is!!

Peanut Butter Marshmallow Cookies

We all love peanut butter right?! Well, unless you are allergic to it...In that case I am really, REALLY sorry...
I have been very lucky to have some MTS Peanut Butter Fluff protein powder sent to me by Marc Lobliner, owner of MTS Nutrition.  He is supplying me with protein powder to use in my recipes and for my own personal use! Awesomeness!! As soon as I got the huge tub of protein, my brain starting going crazy thinking of all the delicious things I could make with such a unique flavor!
I knew right away that I was going to be using this in some protein cookies!!
Yea, they turned out amazing!! If you don't have any MTS peanut butter fluff protein powder go buy some now and then come back and make these cookies.  You can order it here!! 

If you don't have the peanut butter protein, it's ok, you can still kinda make these...they just might not be quite as good...I will go over substitutions shortly.
You will need peanut butter fluff protein powder, canned pumpkin, egg substitute, sugar free fat free vanilla pudding mix, baking powder, vanilla, sweetener if you like, and marshmallows!!

I came across these super fun Mallow Bits at Target.  They are like the little crunchy pieces you get in  those packets of hot cocoa.  
If you don't have these, no worries! You can just use mini marshmallows.  Also, if you don't have peanut butter fluff protein powder, you can use vanilla or even chocolate and your cookies just won't be peanut buttery.  They will still be very tasty though!! 

Very simple instructions here.  Throw all the ingredients into one bowl and mix with a spoon!
Told ya it was simple... 

I highly recommend using parchment paper or a baking mat for these cookies.  If you don't have either I would at least use a generous spritz of non stick spray.  

Just drop the dough onto the cookie sheet.  I got 8 cookies.  
You can make them as big or as small as you want.  

Keep an eye on them the first time you bake them.  Mine took about 12 minutes at 350.
These are super soft and moist cookies and it would be a shame if you burnt them :(

I wish computer screens were scratch and sniff because these smelled amazing!! My whole house smelled like sweet peanut butter wonderfulness! 
I may have forgot to mention it...but you can eat the whole batch yourself! Without any guilt!

That's because all 8 cookies are only 237 calories! 
They are also very low fat and very high protein! I am having this batch for breakfast tomorrow! I can't wait!

If you wanted to share, each cookie little bit of heaven is only 30 calories.
But let's be honest...you won't be able to stop after just one...and there is absolutely no need to!!

Peanut Butter Marshmallow Cookies

  • 1 scoop MTS peanut butter fluff protein powder (30g)
  • 1/2 cup canned pumpkin (120g)
  • 3 T egg substitute (46g)
  • 1/4 package sugar free fat free vanilla pudding mix (8g)
  • 1/2 t baking powder
  • 1/2 t vanilla
  • 2 T marshmallow bits (5g) *You can use mini marshmallows*
  • sweetener if desired

1. Mix everything together in a bowl
2. Drop batter onto cookie sheet (highly recommend parchment paper or baking mat)
3. Bake at 350 for about 12 minutes
4. Eat the whole batch yourself 

Makes 8 cookies - 30 calories each
237 calories for the whole batch
