Key Lime Pie Protein Jello

I love Jello! In fact, if you don't love jello, I am not sure I want to be your friend...Kidding...Kinda...Jello is delicious!! There are so many flavors, it is fat free, can be sugar free, super low calorie, and it jiggles!! What else could you want in a snack?! I know! How about something with a little substance? Something that actually fills you up a bit and satisfies you? Something that has almost 30 grams of protein and still under 200 calories?! I got just the thing.

I know it sounds a little weird but hear me out...
This batch was Key Lime Pie Flavored.
You need 1 box of lime jello mix (I use sugar free), any kind of milk, and protein powder.  I used a vanilla graham cracker protein powder which is amazing!! You can order it here. Vanilla protein would work as well.  The almond milk gives it a great vanilla flavor too.  These flavors combined taste like Key Lime Pie!

You are kinda sorta going to follow the instructions on the jello box.  With a few tiny changes.  Start by boiling 1 cup of water.  Add the jello mix and stir until dissolved.  If using sugar free you may want a little sweetener.  I added one Splenda packet.  
When it is all dissolved, stick this in the freezer for a minute or two.  We are going to be adding milk to it and don't want it to curdle.

While that's chilling, take 3/4 cup unsweetened almond milk.  The package calls for 2 cups of liquid, but I find it sets up better with a bit less.  You can add a whole cup of milk, but it won't set up as good and will be more of a pudding texture.  Add 1 scoop of your protein powder to the milk and whisk it up good.  
It would be great to use one of those shaker bottles (which you would think I would have...) The whisk works good enough.  Get all those chunks out!

Take your mixture out of the freezer and add your cold liquid to it.
It will look like cloudy jello.  As you can see I had a few little protein powder clumps floating around in there.  No biggie.  I will have to get a protein shaker bottle next time I am at GNC. Don't worry, it will still be awesome!!

Pour the mixture into a bowl or pan of any shape! As long as it hold 1 1/2 cup of liquid, you're good to go.  Stick it in the fridge for about 2 hours and get ready to dig in!

This is just one tiny little piece of the whole pan.  Don't you worry though, I ate more than this one measly portion.  Remember, the whole pan is only about 180 calories! That is a pretty big dessert for under 200 calories.  And I bet most desserts don't have 27 grams of protein in them!!
You could top it off with a little cool whip, but it honestly doesn't even need it! The graham cracker protein, vanilla milk, and lime flavoring are so yummy together!!

There are so many flavor possibilities too! 
Vanilla protein + cherry jello
Chocolate protein + strawberry jello
Banana protein + orange jello
Another great idea is to cut up some fruit and throw it in there.  Bananas, strawberries, cherries...

It is like a smoother, creamier, jello.  Don't worry, it still jiggles!! I am not sorry to say that the whole batch is already gone...

Key Lime Pie Protein Jello

  • 1 package sugar free lime jello mix
  • 1/2 cup unsweetened almond milk (120ml)
  • 1 scoop vanilla graham cracker protein powder (30g) (could sub vanilla)
  • sweetener if desired
  1. Boil 1 cup water and add jello mix.  Add sweetener if desired and stir until dissolved.  
  2. Put mixture in freezer for a few minutes.
  3. Whisk together 1 scoop protein powder and 1/2 cup milk.  
  4. Add cold milk mixture to jello mixture and stir well.
  5. Pour into any shape container and refrigerate about 2 hours.
  6. Eat all the jello!!

  1. Whoa, this is pretty cool! You definitely come up with the coolest concoctions ever! I love that you use different things like Jello, chickpeas, protein powder, etc.!

    1. Thanks! I love finding "normal" recipes and then using different ingredients to make them super healthy! Jim thinks I am crazy sometimes, but then he tastes the stuff and is pleasently surprised!
