Cinnamon Cauli Pie

There are so many uses for cauliflower! And no, it is not just good in savory dishes.  That's right, you can use it in sweet dishes too! Like in this delicious Cinnamon Cauliflower Pie.
I guarantee this will not taste like cauliflower! It will be sweet and creamy and cinnamon-y!

Let's get started.
You need one head of cauliflower, cinnamon protein powder, egg substitute, fat free cream cheese, cinnamon, vanilla, baking powder, salt, and sweetener of choice.
*You can use frozen cauliflower too*
*Sub anything creamy for cream cheese such as greek yogurt, cottage cheese, ricotta...
*Use vanilla protein if you must and just add more cinnamon*

First you need to chop up, steam, and puree your cauliflower.  There is no exact measurement here.  I used whatever fit in my steamer.  It was about 500 grams...
Should look just like mashed potatoes!

Stir in the rest of your ingredients and mix it up good.
Now it should look like brown mashed potatoes :)

Pour into whatever kind of baking dish you want to use.  It can be square, rectangle, round...
I like to top it with some cinnamon/sweetener mixture. Makes it extra pretty and tasty.

Bake at 350 for 40-45 minutes. Obviously you may need to adjust your baking time if you use a smaller or bigger pan.
Perfection!!! See how pretty the cinnamon we put on top looks.

You will get about 6 pieces from this, but I usually eat it all by myself! I am starting to think I am a very selfish person?! At least with my food...
That's because the whole dish only has 290 calories!! Is also packs about 44 grams of protein.

Now, I know there is a whole head of cauliflower in this, but I SWEAR you cannot taste it!! The cauliflower gives it a super creamy texture!
It is soft and moist and sweet and just awesome! Also, a great way to sneak in some veggies!! Go make it now!

Healthier Cherry Cheesecake

Who loves cheesecake?! Everyone! But, one plain slice of cheesecake from The Cheesecake Factory is about 700 calories! For one measly slice! I don't know about you, but when I eat dessert, I want DESSERT! Not a tiny little sliver of cake... So, I have created a much healthier cheesecake! The whole pie only has less than 260 calories! And no, it is not a tiny little pie, it was made in a regular sized pie pan.  Let me show you how to make this awesomeness!

Sneak peak...just to get you interested...
This is just one tiny slice from the pie. I bet you thought it wasn't even going to have a crust?!
Well it does!

You might think some of these ingredients are a little odd....go with it.
You will need a package of sugar free cherry jello, unsweetened almond milk, Fiber One cereal, vanilla protein powder, fat free cream cheese, and some spray butter.
Substitutions:
*Any flavor jello (strawberry, lime, orange...)
* Any cereal, graham crackers, vanilla wafers...
*Any kind of milk

Start with your jello mix.  Take one cup boiling water and dissolve the whole package of jello.  I added 2 Splenda but that is optional.  I just like my sweets extra sweet.
Take the whole pot and stick it in the fridge for a bit.  We don't want it to be hot when we use it later.

Let's make our crust! Take 1/2 cup of the cereal and puree it in a blender or food processor.
Get it as fine as possible.

Take 2 tablespoons of the fat free cream cheese and microwave it for about 15 seconds.  This will make it much easier to incorporate in the cereal.  Mix together your crushed cereal and softened cream cheese.
Add some spray butter until you can get it all combined. This will give it a good flavor too.  I added 1 Splenda packet as well.
It should still be crumbly but you can mold it a little.

Get our your pie pan and press the cereal mixture into the pan.  You can easily double this if you want a thicker crust.  I think this amount is perfect.
Now stick this in the freezer.  It will help hold it in place when we add the liquid part.

In another bowl whisk together 1/2 cup milk and 1 scoop protein powder.  Don't worry too much about a couple clumps, we will take care of that later.
Take the jello mixture out of the fridge and add it to this bowl.  Whisk it together a bit.
You could just use this as is.  It will be kinda swirly...To make it even better, pour this into your blender and give it a quick mix.  It will make it nice and smooth.
Take out your crust and pour the mixture over SLOWLY.  You want to be careful not to break up the crust.
Easy does it...
Stick it in the fridge for about 2 hours and get ready for a super tasty treat!!

Look at that amazing color!! I added a little fat free cool whip, but you don't even need it!
Remember, this whole pie only has 257 calories! THE WHOLE PIE!!
You are more than welcome to share, but if you want to eat the whole thing...no problem!!  Not only is it low cal, but it is packed with protein! There is 33 grams of protein in there! It is so good for you, I probably shouldn't even call it dessert :)
That is one awesome bite!! It's creamy, and sweet, and has a nice crunchy crust.  What more could you want?
You can use any brand of protein, but the MTS Vanilla whey has an amazing flavor!! I highly recommend buying it here. Use code KH30 and save 30% on all MTS products.

You can also use lime Jello for a super tasty Key Lime Pie!!
Perfect summer treat!
