Somersault Snack Co.

One of the many reason why I love blogging is that I get the opportunity to try and review some really awesome products! I recently got a very generous box of goodies from Somersault Snack Co
I have done quite a few product reviews, and this is the first company to include such a nice note! Love the fun and bright packaging too!! 

Somersault Snack's most important ingredient is sunflower seeds, which I love!! It is a great alternative to nuts and who doesn't love a pretty sunflower??
I got so many snacks to try! I had no idea they had so many fun flavors! I couldn't wait to try everything.  

I love the different sized bags too.  Big bags for people who like to share.  Medium bags perfect for on the go.  Little single serving bags great for tasting!
I decided to try the pacific sea salt flavor first.  With so many choices, I decided it was best to start with the simplest ones.  

Perfect little bite sized pieces! Anyone who knows me will tell you that I really enjoy tiny things.  They are just more fun and it always seems like you are getting more.
These were very tasty! Salty and crunchy.  I could really taste the sunflower seeds in these!

Dutch cocoa! Yes please! Anything chocolate is usually a winner in my opinion.
Loved the flavor of these chocolatey nuggets! They had just the right amount of sweetness.  They just kind of melt in your mouth after you crunch into them!

I was a little hesitant about the santa fe salsa...I do NOT like spicy stuff so I was worried they would be too hot for me! I had my husband be the guinea pig with these...
After he assured me that they were not spicy, I popped one in my mouth.  So good!! A teeny tiny bit of a bite, but if I can handle it, anyone can! They reminded me of BBQ chips, which are probably my favorite flavor chip.  Of course these are way better for you than any potato chip!

During my own personal tasting party, I decided to bust out some little portion cups.  Just more fun this way! Also, made me think how perfect these would be for an actual party or get together!!
Next up were the cinnamon crunch bites.  I absolutely love cinnamon so I was quite sure these were going to get a thumbs up.  Let's make that two thumbs up! These are probably my favorite out of all the flavors.  Sweet, crunchy, and simply delicious!

The only bad thing about so many great flavors is that I don't know which ones to put in my lunch for tomorrow!!
Luckily there is room for a couple bags! Chances are I will end up eating both of them!!

The only flavor left to try was the salty pepper.  I saved this for last because I was pretty sure I wasn't really going to like it.  I actually really dislike pepper...I never cook with it or put it on my food...I wanted to be sure I did a really good review so I tried them anyway.
Surprisingly, I didn't run for a napkin!! Ha, they were not overly peppery by any means.  Not my top choice, but still had a great flavor and crunch.  If you like pepper even a little bit, I am sure you will love these :)

So there ya have it!! All five flavors, taste tested and approved!! I absolutely love finding new, tasty, and healthy snacks.  These definitely meet my criteria! 
The nutritional facts vary a bit depending on the flavor.  The pacific sea salt ones are 150 calories per servings.  8g fat, 14g carb, and 6g protein.  
These yummy morsels have more antioxidants than blueberries, more protein than almonds, and more fiber than an apple! Talk about a great snack!!

I almost forgot to mention what else they sent!
I don't know if they are psychic or what, but somehow they knew about my little chapstick addiction!! This is some high quality stuff! I am very picky about what I put on my lips!

It is really hard not to smile when someone is taking a picture of you using chapstick...and really hard to put on chapstick when you are smiling...

I really recommend trying some of these amazing snacks! I have seen them in many local grocery stores which is always great! If you can't find them near you, just order some online.  Best part is, they have 100% satisfaction guarantee! Try it and if you don't like it, they will replace it for something else or simply give you a refund.  What have you got to lose?! Nothing, nothing is the answer!!

Quest Creations - Teeny Tiny Cookies

We all know I LOVE protein bars! I eat at least one a day! So the big question is...What is my favorite protein bar? Easy!!

There are so many flavors and you can do so much with them! That's right, you don't just have to eat them out of the package.  I have decided to start a new little series called Quest Creations.  I will share quick and easy ways you can enjoy these amazing bars! 

The first way is probably my favorite way of eating Quest Bars.  
Teeny tiny cookies!! You get 15 itty bitty cookies from one bar! These are some of the tastiest and healthiest cookies you will ever eat!

Did I mention they are probably the easiest cookies you will ever make too!? You can make these cookies with any flavor Quest Bar so pick your favorite and let's get started.
I chose cookie dough this time because that just made the most sense...cookie dough...cookies...

Unwrap the bar and place it on a microwave safe plate.  I highly recommend using a piece of parchment too.  DO NOT use a napkin or paper towel! You will have a sticky mess!
Microwave for about 10 seconds.  Just enough to make the bar soft enough to mold. 

Break the bar up into 15 tiny pieces and roll into balls. 
Place on a cookie sheet with parchment and press the dough balls down a bit.  Preheat oven to 350 and bake for 5-6 minutes.  That's it!!

One of the best things about this recipe is that you don't have to wait long before you have amazing cookies! 
How awesome do those look?!

I bet you never thought you could eat 15 cookies for under 200 calories! Granted they are a bit small...
Just check out that chunk! Quest Bars are very well known for all the chunks!!

Of course you could just break the bar into 2 or 4 pieces and have "normal" sized cookies...but these are way more fun!
These cookies taste fantastic too! They are nice and crunchy and just melt in your mouth. Since they are made from a Quest Bar, absolutely no guilt! Talk about a delicious and healthy snack! 

These are perfect for on the go! I love taking these to work with me.  
I just have to be sneaky because if the kiddos see me eating cookies they will want some too!!  Sorry, these are all mine!

If you have never tried a Quest Bar you really really need to get on it! You can order some here.  I promise you won't be disappointed!  I have made these cookies with just about every flavor and they were all fantastic! Apple Pie and White Chocolate Raspberry were two of my favorites.
Once you have some bars, chose your favorite flavor and make yourself these teeny tiny cookies.

Teeny Tiny Cookies
  • Your favorite Quest Bar
  1. Microwave bar for 10 seconds. (be sure to use parchment or microwave safe plate)
  2. Break bar in to 15 tiny pieces and roll into balls. 
  3. Place on baking sheet and press down a bit.
  4. Bake at 350 for 5-6 minutes.
  5. Enjoy eating over a dozen cookies!!
Makes 15 cookies - 190 calories

21g Protein

Cake Mix Cupcakes

Don't worry...I am not sick...but I am going to be making cupcakes using a mix from a box!! Of course, I am still going to tweak it a bit and make it "Kim Style" 
That usually means adding protein powder! 

Cake mix cake is delicious.  I don't know what it is but cakes, cupcakes, and cookies from a box mix almost always turn out pretty awesome! These still taste great and by altering the instructions a bit, they end up being a little better for you! 

You are actually going to use fewer ingredients than if you would follow the instructions on the box.  No eggs, oil, milk, or even water needed!
Yup, thats it! You only need three ingredients.  Cake mix, protein powder, and diet pop! Flavor combinations are endless.  As you can see I chose confetti cake mix, vanilla protein powder, and diet 7up. 
You could also try:
*Chocolate cake mix, peanut butter protein powder, and diet Dr. Pepper*
*Vanilla cake mix, cake batter protein powder, and diet cherry 7up*
*Red velvet cake mix, chocolate protein powder, and diet Pepsi*
Get creative!!

For the frosting you just need fat free cream cheese and vanilla.  I added a sweetener too.  
You can do a number of different things for the frosting...
*Mix nonfat greek yogurt with protein powder*
*Top with fat free whipped cream*
*Mix up some sugar free pudding*
Once again...get creative!

I love this recipe because you can make as many cupcakes as you want! I made what I consider a single serving.  It ends up being 3 regular sized cupcakes or 10 mini cupcakes!
You are just going to mix together 1/4 cup cake mix, 1 scoop protein powder, and 1/3 cup pop.  If you were to weigh out the cake mix and protein powder, you would see that we are using equal amounts.  So if you want to make more, just double or triple the amount of everything you use! Just be sure to use equal amounts of protein powder and cake mix!

Pour the batter into whatever size pan you like.  I made a batch of mini cupcakes here.
I didn't have liners, but I made sure to spray the pan quite liberally! The little treats popped out just fine.

Into the oven they go.  Preheated at 350.  Mini cupcakes took about 7 minutes and normal sized ones needed 12-13 minutes.  
How cute!! Love the little confetti specks!

Let these cool while we mix up the frosting.  
Side note...you can absolutely eat these without frosting! I made up an extra batch like this and had myself 10 little confetti muffins! Awesome little breakfast! They freeze great so feel free to make a lot of them!

For the frosting just mix together some cream cheese, vanilla, and sweetener.  I used about 2 tablespoons to frost one single serving batch.  Add vanilla and sweetener to taste.
I absolutely love this cream cheese mixture! I will mix up a big container of it and keep in the fridge. It is great to dip pretzels in, spread on rice cakes, or as a fruit dip!

It is going to serve as the perfect cupcake frosting today.  As you can see, we have switched back to the bigger cupcakes.  
They look pretty awesome...but I think I know how to make them just a little bit better!

You guessed it!!!
Oh, and sprinkles don't have calories...if someone tells you differently, they are a big liar! 

Now that is one fantastic dessert! And once again, all 3 is what I consider one serving! That's because the whole batch is only 275 calories!
And yes, they still taste fantastic! They are very light and I love the extra protein boost!

I don't even think you can tell that these were made without the eggs, oil, and milk!
I took some of these to my parent's house (see...I do share sometimes...) Everyone loved them!! My parents own their own bakery so they know their sweets! 

So now you can finally use that boxed cake mix that has been sitting in the cupboard forever!! 
I think I am going to try vanilla cake mix with cookies and cream protein powder next!!!

Cake Mix Cupcakes 
  • 1/4 cup funfetti cake mix (30g)
  • 1 scoop MTS vanilla protein powder (30g)
  • 1/3 cup diet lemon lime pop (80ml)
Frosting 
  • 2 T fat free cream cheese (33g)
  • 1/2 t vanilla
  • sweetener to taste

1. Mix together cake mix, protein powder, and pop.  
2. Pour batter into muffin cups (try mini ones too!)
3. Bake at 350 for 12-13 minutes (8min for mini)
4. Mix together cream cheese, vanilla, and sweetener.
5. Let cupcakes cool and frost. 
6. Eat the whole batch :)

Makes 3 regular cupcakes or 10 mini cupcakes
275 calories for the whole batch with frosting!

Healthier Pop Tarts!

I am not gonna lie...Pop Tarts are delicous! Seriously...the chocolate peanut butter ones are out of this world! But, they are not exactly that great for you...sorry to break it to ya...That doesn't mean I don't indulge in one or two from time to time! 

While they are very good tasting, they are not very filling...I can eat a package of the pastries and still be starving! I decided that these Pop Tarts needed a makeover! I give you my healthier version of the toaster pastry!
Looks pretty awesome right?! I would compare these ones to the confetti cupcake flavor! Best part about this recipe is you can make virtually any flavor you want! I can't wait to make cookies & cream, cinnamon, fruit filled ones, peanut butter, and so many more!

Ingredients are pretty simple and will change a tiny bit depending on what flavor you want.
For the pastry base you will need whole wheat flour, unsweetened applesauce, baking powder, apple cider vinegar, vanilla, and your choice of sweetener.  
*You can use any type of flour*
*white vinegar will work too*

The filling can be whatever you decide! I am using fat free cream cheese and vanilla protein powder.  You can use jam or jelly, any flavor of protein powder, chocolate chips...I really like the texture of the cream cheese though!

For the glaze I used a little more protein powder and thinned it out with some water.  Once again, you can get as creative as you like! Sprinkles are a must for the confetti cupcake flavor :)

To start, mix together all the base ingredients.  If you want, you could add a little cinnamon or cocoa powder to change the flavor.  Mix well until you get a dough ball.  It will be a little sticky!
Take parchment paper or a baking mat and spray it with some nonstick spray.  Put the dough between the paper and roll it as flat as you can without it tearing.

Works just as well with the baking mat!
Don't worry about getting it to look perfect. As long as it somewhat resembles a rectangle.  
I spent a little extra time on this one since I knew I would be taking pictures! The ones I have made since then have been less photogenic!!

Cut into 2 equal-ish pieces.
The filling is really whatever you want it to be! I just mixed together 1 tablespoon of fat free cream cheese with 1/2 tablespoon of vanilla protein powder.  Worked great! 

Spread your filling on one half.  
Don't go the whole way to the edges though.  We need to seal it up!

Put the other half on top and use a fork to press around the sides.  
Seal it up good so the filling doesn't bust out in the oven! Bake at 350 for about 20-25 minutes or until golden brown.  I actually like mine a little softer than a normal Pop Tart, but you can make it as crispy as you like.  

Perfect!! Just a little brown around the edges!
To make the glaze I just mixed together 1/2 tablespoon of vanilla protein powder and a little water.  You want it to be pretty thin.  

Pour the mixture over the top and add sprinkles!! 
I really like using the protein powder and water mixture because it actually sets up.   

I would say that looks pretty close to a store bought Pop Tart!!
Much better for you and actually quite substantial! Only about 150 calories per pastry! And yes, that is including the sprinkles :)

I really love the creamy filling!! This recipe makes just one treat, but you can easily double it for two! You could also try making mini Pop Tarts!
I cannot wait to experiment with different flavor combinations!! The possibilites are endless!

Healthier Pop Tarts 

PopTart Base
  • -1/4 cup whole wheat flour (30g)
  • -1 T unsweetened applesauce (15g)
  • -1/2 t apple cider vinegar
  • -1/2 t baking powder
  • -1/2 t vanilla
  • -4 sweeteners (or to desired sweetness)
Filling
  • -1/2 T vanilla protein powder (3g)
  • -1 T fat free cream cheese (15g)
Glaze
  • -1/2 T vanilla protein powder (3g)
  • -water to thin
  • -spinkles!!!

1. Mix together all the pop tart base ingredients until it forms a dough ball.
2. Place between parchment paper of baking mat.  Spray paper or mat with nonstick spray.
3. Roll dough as thin as you can without tearing it.
4. Cut in dough in half to form 2 equal rectangles.
5. Mix together protein powder and cream cheese for filling.
6. Spread filling on one half and cover with the other half.
7. Fork around the edges to seal it up.
8. Bake at 350 for about 20-25 minutes or until golden brown.
9. Mix together protein powder and water.  Should be a thin glaze. 
10. Spread over the top of slightly cooled pop tart.  
11. Add sprinkles! 
12. Enjoy :)

Makes one confetti cupcake pastry - 150 calories

10g Protein

29 and Feeling Fine!!!

June 1 was my birthday!! I guess I should say June 1 IS my birthday!! I am pretty sure it will coming around again next year! I was kinda lazy and didn't really take many pictures during the day, but I did make a little video capturing some of the highlights :) Take a look! 

PB&J Protein Muffins

I have been experimenting a lot with a new flavor of protein powder from MTS.  Peanut Butter Fluff!!  So far everything I have made with it has been fantastic!! You really gotta try my Peanut Butter Marshmallow Cookies! One of my best cookie recipes ever!

Someone on Facebook had used my recipe, tweaked it a bit, and made muffins from the batter.  I got to thinking...I love muffins!! I also love the peanut butter and jelly combo.  I tweaked the recipe a tiny bit more and came up with some amazing PB&J Protein Muffins!
I ate the whole batch for breakfast yesterday! At only about 260 calories for all 6, who wouldn't eat them all?!

I highly recommend using MTS Peanut Butter Fluff protein powder for this recipe, but if you must, you can use vanilla.  They just won't taste quite as peanut buttery.
In addition to the protein powder, you will also need any flavor jelly or jam, PB2, canned pumpkin, egg substitute, vanilla, baking powder, and sweetener if you want.  I find the MTS powder to be sweet enough on it's own, so I left out the sweetener.  
*You can use any kind of peanut butter or nut butter*

Keeping it easy as always! Mix together everything except for the jelly.  
Seriously love these little bowls.  They make baking so fun! 

I took a little taste of the batter just to make sure it was sweet enough and peanut buttery enough.  
I could have eaten the whole bowl!! 

I made 6 nice sized muffins with the batter.  You can make mini or mega muffins if you like! I suggest using muffin liners or silicon baking cups.  
Fill each cup about 3/4 of the way full.  Then take a small dollop of jelly and press it down into the middle of each one.  Cover it up a bit so the jelly doesn't burn on top.  It's ok if it peeks through a little. I used sugar free strawberry jelly, but you can use any kind and flavor you like.  You could even leave it out completely and just have peanut butter muffins.

Into the oven at 350 for about 22-25 minutes.  I hate waiting...
So worth the wait!! Eating these reminds me of being a kid! I think I ate a peanut butter and jelly sandwich everyday for about 12 years straight! I still love them!!

Each delectable muffin is only about 42 calories! Like I said before, I just eat them all myself! 
They make a great breakfast on the go! Also, they freeze great so you can make up a few batches and have them all week. 

These muffins don't just look, smell, and taste amazing...they are quite good for you too! The whole batch is very low fat, low carb, and had a hefty 33 grams of protein.  
Store bought muffins are great and all, but I really like knowing what is in the food I am eating.  

The jelly hiding in the middle gives them the perfect amount of sweetness. 
Next time I will try grape jelly! Maybe apricot...or blackberry...or even apple butter! So many possibilities!!

PB&J Protein Muffins

  • 1 scoop MTS peanut butter fluff protein powder (30g)
  • 1/2 cup canned pumpkin (120g)
  • 3 T egg substitute (46g)
  • 2 T PB2 (12g)
  • 2 T sugar free jelly (34g)
  • 1/2 t vanilla
  • 1/2 t baking powder 
  • sweetener to taste

1. Add everything but the jelly into a bowl and mix.
2. Fill muffins cup with batter about 3/4 of the way.
3. Put a dollop of jelly in the middle of each muffin and push it down.
4. Bake at 350 for 22-25 minutes.
5. Enjoy!!

 Makes 6 muffins - 42 calories each
257 calories for the whole batch

33g Protein
