Corn Fritters

I have made just about every flavor of pancake you can imagine! I have made sweet ones like chocolate and pumpkin, and I have made savory ones like spinach and broccoli! I feel like some people get a little apprehensive about the savory pancakes...I understand! So instead of calling these pancakes, I will call them corn fritters!!
What really makes a pancake a pancake anyway...I mean yes, these are round-ish and cooked in a skillet...Does it really matter though?? These little bite sized guys are super tasty and super healthy! Call them what you want, I love them!

Ya, simple too! Four ingredients!
Canned corn, egg substitute, MTS vanilla whey, and baking powder.
*You can use fresh corn too*
*Real egg would be fine*
*Not quite sure about the sweet/savory combo? Use unflavored protein*

Drain your corn and get as much liquid out as possible.  Dab with a paper towel if you are impatient. 
I love using canned veggies! So simple and you can buy in bulk because they never go bad.

 Mix together the egg, protein powder, and vanilla first.  When that is nice and smooth, stir in the corn.
I went the sweet route with these, but you can definitely make them savory.  Add some peppers, onions, garlic, salt and pepper...

Get your skillet nice and hot, coat with non stick spray, and cook like pancakes whatever these things are!
The batter will be a little runny so it is quite impossible to make them perfectly round!

These have a perfect little crunch to them.

I love mine topped off with a little sugar free syrup and spray butter.
If you made them savory I bet they would be awesome with some sour cream and salsa for dipping!

Either way they are delicious! You could be all fancy and use a fork, but I think they are the perfect little finger food!
Such a great way to add veggies to your diet too! There is a whole can of corn in these.  

And yes, I consider this whole plate one serving :)
You get about 14-16 fritters for only 242 calories plus 33 grams of protein! Great for breakfast! Low carb and low fat too.

Corn Fritters


  • -1/2 cup corn (125g)
  • -3 T egg substitute (46g)
  • -1 scoop MTS vanilla protein powder (30g)
  • -1/2 t baking powder
  • *If you want to make them savory you can use unflavored protein powder and add any additional spices and chopped veggies

    1. Mix all ingredients together! (best to mix everything but corn first and then stir in the corn last)
    2. Cook like pancakes on a hot pan.
    3. Enjoy!

    Chocolate Protein Pancakes

    On a recent pancake post, I asked what flavor I should try to make next.  One reader asked for some chocolate pancakes.  Well, ask and you shall receive!! I will admit, it did take me a few tries.  Third times a charm.  Don't worry though, no pancakes were wasted in the creation of these.  The other batches were OK, just not blog worthy.  They still ended up in my belly :) Enough rambling...
    Excited yet?!

    Ingredients are quite simple, as always! No need to complicate things!
    You will need chocolate protein powder, unsweetened cocoa powder, canned pumpkin, egg substitute, nonfat greek yogurt, baking powder, salt, and sweetener.  You can also add some vanilla which is not photographed! You all know what vanilla looks like...
    *If you don't have pumpkin, you could sub mashed banana or applesauce and just use less.  They will be much thinner though*

    Put it all in a bowl.
    If you are feeling crazy you could add some cinnamon and vanilla, but honestly I don't really think you will miss it.

    Mix it up nice and smooth.  The batter will be a little thick.
    Perfect!

    Get that pan nice and hot and coat with non stick spray. 
    You should get 8 pancakes.  Too bad you can't make scratch and sniff pictures because the chocolatey goodness smell is amazing! As soon as they hit the hot pan you will smell the awesomeness!

    Ok, get out the compass, I am pretty sure these are perfect circles!

    Now, just because I am making chocolate pancakes, it does not mean they won't be super healthy!!  This whole stack is only 285 calories.  They are also very low carb and low fat.  Oh, and don't forget about the 44 grams of protein in these flap jacks!
    How can you pass up that stack?! I just topped this batch with some Walden Farms chocolate syrup, but you can get as crazy as you want.  Try some fat free whipped cream, chocolate sprinkles, mini chocolate chips, or even regular old maple syrup.

    That was one chocolatey bite!! The pumpkin makes them so soft and moist!
    So there ya have it! I am so glad someone asked me to try making these!! They will be a new regular breakfast in the Hoeltje household :)

    Chocolate Protein Pancakes
    • 1 scoop chocolate protein powder (30g)
    • 3/4 cup canned pumpkin (180g)
    • 1/4 cup nonfat greek yogurt (56g)
    • 6 T egg substitute (92g)
    • 2 T unsweetened cocoa powder (10g)
    • 1/2 t vanilla
    • 1/2 t baking powder
    • dash salt
    • sweetener to taste
    Mix all ingredients in the same bowl and cook like regular pancakes! Be sure to use nonstick spray!

    285 calories for whole stack
    1g Fat
    27g Carb
    44g Protein

    Spinach Pancakes

    I absolutely love pancakes! For breakfast, lunch, dinner, or snack.  There really is no wrong time to eat them.  You may have already tried my Pumpkin Pancakes or Carrot Cake Pancakes.  Both are super healthy and loaded with protein.  Way better than any box mix out there.  I decided to try something new today.  Oh my... it was awesome! I give you Spinach Pancakes!!
    I know, I know...green pancakes...kinda crazy right? Too bad I didn't think of them for St. Patrick's Day!! These are so tasty.  You can make them savory or sweet. The whole stack is only 200 calories and packed with 31 grams of protein!!  

    Ingredients needed are...
    MTS Vanilla whey, canned spinach, egg substitute, and baking powder.  You can also add a dash of salt if desired.  You could use frozen spinach too.  Just thaw and drain extra liquid.

    Feel free to try other brand of protein, but I cannot guarantee the same results.

    First, drain your spinach.  Get as much of the liquid out as possible. 

    Mix together the egg, protein powder, and baking powder first. 
    Then stir in the spinach. Mix it up good.

    Mmmm...I seriously cannot wait until next St. Patrick's Day!

    I just topped mine with a little spray butter and a sprinkle of salt! Yum!
    Now you could probably add some other spices or seasonings to the batter, but I think they are great just like this.  No need to complicate a good thing.

    Spinach Pancakes
    • 1 cup canned spinach (240g)
    • 3 T egg substitute (46g)
    • 1 scoop MTS Vanilla Whey (30g)
    • 1/4 t baking powder
    • dash salt
    1. Drain spinach well
    2. Mix together egg, protein powder, and baking powder (may need to add more egg depending on protein brand)
    3. Stir in spinach
    4. Cook like normal pancakes
    Makes 7-8 pancakes
    200 calories for the whole stack

    Chocolate Pumpkin Protein Pancakes

    Are you getting sick of things pumpkin yet?? Are you tired of pancakes yet?? Well, I am not!! I don't think I will ever get tired of pancakes and pumpkin.  I did decide to switch it up a bit this week and try some chocolate pumpkin pancakes.  With an extra boost of protein of course.
    Now that is a big stack of pancakes! 8 total in case you weren't sure.  And like always, these were all for me.  That is a huge serving for under 300 calories.  I swear these are way better than any boxed pancake mix too.  I feel like the boxed mixes don't have much flavor...kinda boring.  These are certainly not boring! Pumpkin, chocolate, and cinnamon are amazing together.  I can also guarantee that mix stuff will not make pancakes as moist as these.

    You really don't even need many more ingredients.  When you use the mix you still have to add oil and eggs.  Plus, these are 438,298 times better for you!
    You will need canned pumpkin, egg beaters, chocolate protein powder, cinnamon, baking powder, a dash of salt, and sweetener of your choice if desired.

    These are super easy too.  Everything can be mixed in one bowl with one spoon.  

    Just dump all your ingredients in there and mix until smooth.  Gotta love that baby food looking batter again.

    Get your pan nice and hot and use some non stick spray.  You will get 8 pancakes from this batter.  I made two batches of four.
    Look for those tiny bubbles around the edges to tell you when to flip.

    Can you see how soft and moist these are?! I topped mine with some sugar free syrup and a touch of cocoa powder just to make it look even prettier.  
    In case you didn't catch it earlier, this whole stack is only 285 calories! That's only about 35 calories per pancake.  Not only that, but this breakfast is packing a whopping 44 grams of protein! Can your boxed mix do that?! Oh, and they are fat free too. That's because I used an egg white protein powder, but you can use any kind.  

    Chocolate Pumpkin Protein Pancakes
    • 1 cup canned pumpkin (240g)
    • 1 scoop chocolate protein powder (30g)
    • 2/3 cup egg beaters (138g)
    • 1/4 t baking powder
    • 1 t cinnamon 
    • dash salt
    • sweetener if desired 
    Simply mix all your ingredients together until smooth.  Cook like regular pancakes.  Eat the whole stack!! Enjoy!

    Protein Pumpkin Pancakes

    I love love love using pumpkin in baking!! It makes everything so moist and creamy.  It is also basically fat free and very low in calories.  Super high in vitamin A! I am not really sure what vitamin A is good for...but pumpkin has a LOT of it! One cup has 560% of the daily recommended amount.  I hope too much vitamin A isn't bad for you?!

    I am so in love with pancakes lately too.  These pumpkin pancakes are super yummy, extremely healthy, very high in protein, and so easy to make!

    Very small ingredient list! I don't know about you, but I get overwhelmed when I see a recipe with to many ingredients.  I don't even want to try to make it! This is easy, I swear.
    You will need some protein powder.  Any flavor that mixes well with pumpkin will do.  I am using MTS Vanilla Whey. You also need canned pumpkin, egg beaters, cinnamon, baking powder, and sweetener if you wish.  I used three packets of Splenda.  

    Feel free to try using any brand of protein, but I recommend MTS.

    Ready for these complicated steps!? Oh right, there aren't any...Add everything into a bowl and mix with a spoon. 
    The batter will be a bit thick.  Not as runny as "normal" pancakes.  

    Get your skillet nice and hot and be sure to coat with non stick spray.  Otherwise these buggers will stick!
    You will see a few bubbles in the middle when ready to flip, but you have to look closely! If you try to flip too soon they will fall apart.
    My pancake flipping skills are improving! Those are some pretty round flapjacks!! I remember my dad used to make up Mickey Mouse pancakes.  Now he is a pancake master :)

    You will get eight pancakes.  The whole batch has about 250 calories!
    Add a little sugar free syrup and you have one awesome breakfast!!

    I will NOT be sharing this stack.
    So soft! The pumpkin, cinnamon, and vanilla flavors are perfect!

    Protein Pumpkin Pancakes
    • 3/4 cup canned pumpkin (180g)
    • 1 scoop MTS Vanilla Whey (30g)
    • 1/2 cup egg substitute (92g)
    • 1/2 t baking powder
    • 1/2 t vanilla
    • 1 t cinnamon
    • sweetener to taste (3 packets)
    1. Simply mix everything together and cook on a hot skillet! Be sure to use non stick spray and test the edge before flipping. 
    Makes 8 pancakes
