Healthier Cherry Cheesecake

Who loves cheesecake?! Everyone! But, one plain slice of cheesecake from The Cheesecake Factory is about 700 calories! For one measly slice! I don't know about you, but when I eat dessert, I want DESSERT! Not a tiny little sliver of cake... So, I have created a much healthier cheesecake! The whole pie only has less than 260 calories! And no, it is not a tiny little pie, it was made in a regular sized pie pan.  Let me show you how to make this awesomeness!

This is just one tiny slice from the pie. I bet you thought it wasn't even going to have a crust?! 
Well it does!

You might think some of these ingredients are a little odd....go with it.
You will need a package of sugar free cherry jello, unsweetened almond milk, Fiber One cereal, vanilla protein powder, fat free cream cheese, and some spray butter.
Substitutions:
*Any flavor jello (strawberry, lime, orange...)
* Any cereal, graham crackers, vanilla wafers...
*Any kind of milk 

Start with your jello mix.  Take one cup boiling water and dissolve the whole package of jello.  I added 2 Splenda but that is optional.  I just like my sweets extra sweet.
Take the whole pot and stick it in the fridge for a bit.  We don't want it to be hot when we use it later.

Let's make our crust! Take 1/2 cup of the cereal and puree it in a blender or food processor.  
Get it as fine as possible.  

Take 2 tablespoons of the fat free cream cheese and microwave it for about 15 seconds.  This will make it much easier to incorporate in the cereal.  Mix together your crushed cereal and softened cream cheese.  
Add some spray butter until you can get it all combined. This will give it a good flavor too.  I added 1 Splenda packet as well.
It should still be crumbly but you can mold it a little.

Get our your pie pan and press the cereal mixture into the pan.  You can easily double this if you want a thicker crust.  I think this amount is perfect.
Now stick this in the freezer.  It will help hold it in place when we add the liquid part.

In another bowl whisk together 1/2 cup milk and 1 scoop protein powder.  Don't worry too much about a couple clumps, we will take care of that later.
Take the jello mixture out of the fridge and add it to this bowl.  Whisk it together a bit. 
You could just use this as is.  It will be kinda swirly...To make it even better, pour this into your blender and give it a quick mix.  It will make it nice and smooth.
Take out your crust and pour the mixture over SLOWLY.  You want to be careful not to break up the crust. 
Easy does it...
Stick it in the fridge for about 2 hours and get ready for a super tasty treat!!

Look at that amazing color!! I added a little fat free cool whip, but you don't even need it!
Remember, this whole pie only has 257 calories! THE WHOLE PIE!!
You are more than welcome to share, but if you want to eat the whole thing...no problem!!  Not only is it low cal, but it is packed with protein! There is 33 grams of protein in there! It is so good for you, I probably shouldn't even call it dessert :)

Cherry Cheesecake
  • 1 package sugar free cherry jello
  • 1/2 cup (120ml) unsweetened almond milk
  • 1 scoop (30g) MTS vanilla whey
  • 2 T (33g) fat free cream cheese
  • 1/2 cup (30g) Fiber One cereal
  • spray butter
  • sweetener if desired
  1. Mix one cup boiling water with jello powder and sweetener.  Dissolve powder and stick in refrigerator.
  2. Add cereal to blender or food processor and puree until very fine.  
  3. Microwave cream cheese for 15 seconds and mix with cereal.  Add spray butter until you can mold it a bit.  Press crust into pie pan.  Put crust in freezer to set.
  4. In another bowl whisk together protein powder and milk.  
  5. Add jello mixture to milk mixture.  Put this in your blender and give it a quick puree. 
  6. Pour puree slowly over the crust. 
  7. Refrigerate 2 hours and enjoy!!!
