Corn Fritters

I have made just about every flavor of pancake you can imagine! I have made sweet ones like chocolate and pumpkin, and I have made savory ones like spinach and broccoli! I feel like some people get a little apprehensive about the savory pancakes...I understand! So instead of calling these pancakes, I will call them corn fritters!!
What really makes a pancake a pancake anyway...I mean yes, these are round-ish and cooked in a skillet...Does it really matter though?? These little bite sized guys are super tasty and super healthy! Call them what you want, I love them!

Ya, simple too! Four ingredients!
Canned corn, egg substitute, MTS vanilla whey, and baking powder.
*You can use fresh corn too*
*Real egg would be fine*
*Not quite sure about the sweet/savory combo? Use unflavored protein*

Drain your corn and get as much liquid out as possible.  Dab with a paper towel if you are impatient. 
I love using canned veggies! So simple and you can buy in bulk because they never go bad.

 Mix together the egg, protein powder, and vanilla first.  When that is nice and smooth, stir in the corn.
I went the sweet route with these, but you can definitely make them savory.  Add some peppers, onions, garlic, salt and pepper...

Get your skillet nice and hot, coat with non stick spray, and cook like pancakes whatever these things are!
The batter will be a little runny so it is quite impossible to make them perfectly round!

These have a perfect little crunch to them.

I love mine topped off with a little sugar free syrup and spray butter.
If you made them savory I bet they would be awesome with some sour cream and salsa for dipping!

Either way they are delicious! You could be all fancy and use a fork, but I think they are the perfect little finger food!
Such a great way to add veggies to your diet too! There is a whole can of corn in these.  

And yes, I consider this whole plate one serving :)
You get about 14-16 fritters for only 242 calories plus 33 grams of protein! Great for breakfast! Low carb and low fat too.

Corn Fritters


  • -1/2 cup corn (125g)
  • -3 T egg substitute (46g)
  • -1 scoop MTS vanilla protein powder (30g)
  • -1/2 t baking powder
  • *If you want to make them savory you can use unflavored protein powder and add any additional spices and chopped veggies

    1. Mix all ingredients together! (best to mix everything but corn first and then stir in the corn last)
    2. Cook like pancakes on a hot pan.
    3. Enjoy!

    Vitalicious

    I love breakfast foods...bagels, pancakes, waffles, eggs, and muffins! Some may disagree, but I strongly believe that you can enjoy these foods at any time of the day! Pancakes for lunch? Yes! Eggs for dinner? You bet!

    Given my love for breakfast type foods, you can only imagine my excitement when a big box of VitaTops arrived at my door!
    VitaTops are just one of the many products that Vitalicious carries.  They also have regular muffins, cakes, brownies, mixes, pizzas, and sandwiches.

    In case you haven't heard of VitaTops before, they are like muffins, but only the tops! Duh, the best part of the muffin! Genius!  They sent me all kinds of goodies to try and review.  Good thing I was hungry!
    I got to try 4 flavors of VitaTops and 2 flavors of the mini VitaCakes.  

    I was already in love with these treats because they come in a box that says "store in freezer".  Why does that excite me? Well, I hate when I buy baked goods like muffins or cakes from a store and they go bad so quickly.  
    These are all packaged individually so you can just take one or two out of the freezer when you want! The rest will keep frozen and fresh for a very long time.

    You can let them thaw by sitting out, microwave for a few seconds, or toast them!

    The Wild Blueberry was one of my favorites.  I loved all the blueberries and crumbles on top!
    I ate this one after just letting it thaw on the counter for a bit.  So soft and such a great flavor!

    Calling all chocolate lovers! Deep Chocolate! That's right, not dark chocolate or double chocolate, but Deep Chocolate!
    This was basically like eating a chocolate chip brownie! Except this brownie is only 100 calories, 1.5 grams of fat, 26 grams of carb, and 4 grams of protein.  Plus, all Vitalicious products are Kosher certified and all natural with no artificial additives or preservatives.

    Speaking of brownies...
    These mini VitaCakes are basically like a soft chocolatey brownie but much better for you! They are only 50 calories a piece too! I definitely did not just have one! Fudgy Chocolate and Chocolate Rasberry. Yum!

    They were both very tasty but I really liked the Fudgy Chocolate one. The raspberry one was very similar but with a nice fruity flavor too. 
    So many chocolate chips packed into one cake! These are excellent warmed up in the microwave for a couple seconds.  I plan on putting a scoop of vanilla ice cream on one for dessert very soon! VitaCake al a mode! 

    I was very excited to try the Chocolate Peanut Butter top! Just about anything containing peanut butter is going to get a thumbs up from me!
    Two thumbs up! I also microwaved this one and the peanut butter chips got all melty...It was so soft and chocolatey and simply delicious! 

    Last but not least was a good old Chocolate Chip top.  You really can't go wrong with such a classic flavor.  Especially when you put that many chocolate chips in something!
    This was really good toasted!! I just love the convenience of these too! 

    Having them be packaged individually makes them perfect for tossing in my lunchbox. I have mentioned before that I always pack my food for work.  In case you were wondering, I am a nanny :) Notice my Tinkerbell tuperware...
    I love that I can take them right out the freezer, toss them in my lunchbox, and they are thawed and ready to eat when I get hungry! Only one problem...the kiddos see me eating them and want some for themselves! Can you blame them?? Now I know to always pack extra!

    I also always take snacks with me when I am going on a road trip.  Short or long, I never leave the house without a snack! You just never know when hunger will strike.
    Take a VitaTop that may still be slightly frozen, place it on the dash in the sun, and you have yourself a warm and healthy snack in no time!

    Clearly these are great just out of wrapper, microwaved, and toasted...but there is much more you can do with them!!  I have confessed to my peanut butter obsession in the past...
    Uh yea...this was heavenly...

    I also have a slight obsession with cream cheese.  I put that stuff on everything! I knew it was going to be fantastic with the Wild Blueberry VitaTops!
    I love being right! Kinda like a bagel, but much better!! Most bagels will run you about 350 calories...both of these VitaTops are only 200 calories! Add a little fat free cream cheese and you got yourself one tasty breakfast for only about 250 calories! 

    I cannot say what my favorite flavor is because there are still so many more I need to try!! These were all amazing but the VitaTops also come in flavors like Banana Chocolate Chip, Carrot Cake,  Triple Chocolate Chunk, Mint Chocolate Chip, Apple Crumb, Golden Corn, Banana Nut, Blue Bran, Cran Bran, Deep Chocolate Pomegrante, and even Sugar Free Velvety Chocolate!!
    Now you see why I cannot choose a favorite just yet!

    I definitely plan on doing some more taste testing in the future! I think Carrot Cake and Apple Crumb are calling my name...
    Many grocery stores sell Vitalicous products in the freezer section.  You won't get all the variety though so I suggest checking out the Vitalicious site and ordering some online!

    Broccoli Pancakes

    I know what you're thinking!! Broccoli Pancakes?! Bleh! Trust me! These are amazing! Would it help if I just called them Broccoli Cakes?! Think about it...I bet you eat crab cakes! If you saw crab pancakes on a breakfast menu, you would probably be hesitant to order them, but you would order crab cakes! So let's not get all caught up on what we want to call this awesome creation!
    Pancakes don't just have to be the plain, white, and somewhat boring breakfast food we are used to! They can be savory or sweet! I guarantee these are better for you than a mix from a box!

    Like I said, you can make these sweet or savory.  I have had them both ways and they loved each and every bite! I know some people have a hard time with the green color but I think it makes them pretty :) I seriously can't wait til St. Patrick's Day when everyone is dying to make these!

    All you will need is...
    Broccoli (frozen or fresh), protein powder (unflavored or vanilla), egg substitute, baking powder, and salt! 
    **Experiment with other protein flavors too! I had one person tell me they made them with chocolate and another used cake batter! They were both very happy with the results!

    If using fresh broccoli just chop it up and steam it.  If using frozen, just steam it! Then drain it and get as much liquid out as possible.  It is best if you can let it sit for a while, but I just used some paper towel to suck up as much liquid as possible.  

    Throw the broccoli and egg into a blender and mix til smooth. 
    You could add the rest of the ingredients to the blender too, but I used a small single serve cup and it wouldn't all fit.  

    Put the broccoli and egg puree into a bowl and stir in the remaining ingredients.  
    If you want to go the savory route, you can add some chopped veggies, or any other spices you like! I bet even some shredded cheese would be tasty!

    The batter will be a little thick, but just cook these like regular pancakes.  If it seems way too thick, just add a little more egg.  Protein powders all mix up differently so just make it the consistency you like.

    Now seriously! Do those look tempting or what?? Even if you are not sure, you know you want to try them just out of curiosity! I am 99.9% you will love them!!
    Talk about a good for you breakfast! I know we all get hung up on using the term "healthy" but I am pretty sure no one would argue that pancakes made with an entire bag of broccoli are quite healthy!

    This whole stack of 8 cakes is only 240 calories! Very low fat, very low carb, and tons of protein! Of course they are very customizable too! Add more egg and protein, or less broccoli, or cheese and onion, make them sweet, or savory...You can really make them fit your needs! 
    So soft and hearty! Such a great way to get some more greens into your diet too! I don't know about you, but I would much rather eat a stack of pancakes instead of a bowl of broccoli! YUM! 

    Oh, and if you're feeling really crazy...you can follow this same recipe and use cauliflower instead of broccoli!!!! Yup, delicious too! I will be sure to make a post next time I have Cauliflower Pancakes!!

    Broccoli Pancakes
    • 1.5 cups steamed broccoli (255g)
    • 1 scoop unflavored or vanilla protein powder (30g)
    • 6 T egg substitute (92g)
    • 1/2 t baking powder
    • dash of salt
    • any other seasonings or chopped veggies you may like!

    1. Steam and drain broccoli.
    2. Dry as good as possible. 
    3. Add egg and broccoli to food processor or blender and puree smooth.
    4. Add other remaining ingredients and mix well.
    5. Cook like regular pancakes.
    6. Enjoy!

    My Oatmeal Review

    Oatmeal is such a great thing!! It's super healthy and so versatile.  You can eat a bowl of it for breakfast and you can bake all sorts of yummy treats with it! Cookies, bars, muffins... I got the opportunity to volunteer to do a review for a great oatmeal company. Free oatmeal?! Sign me up! The company is called MyOatmeal.  They have such a great concept.  You go online and create your very own oatmeal flavor! Every order is custom made.  Any flavor you can think of, you can make! Seriously! S'mores, apple pie, blueberry cheesecake, oatmeal raisin cookie, double fudge peanut butter brownie, and so many more!

    I kept it somewhat simple and ordered carrot cake and red velvet cake.
    These are huge bags by the way! Each bag has 11+ servings.  The ingredients list is super simple. Oats and natural flavors.  

    You can add basically anything to your own order.  Dried fruit, nuts, seeds, and sweeteners.  You can also choose between quick oats, 5 grain rolled oats and flax, steel cut oats, smash blend oats, gluten free, and organic gluten free thick rolled oats.  I like quick oats the best, especially when I use them in baking.  

    First up was the carrot cake oatmeal.  It smelled amazing! I could smell the carrot cake goodness as soon as I opened the resealable bag.  I knew I was in for a real treat. I kept my first meal with the oats pretty simple.  
    Just a nice warm bowl of carrot cake oatmeal.  I just cooked the oats with water for 1:30.  I then stirred in a little unsweetened almond milk and a little fat free cream cheese.  After all, what is carrot cake without the cream cheese?! I topped it off with a drizzle of sugar free syrup.  
    Amazing!!! I felt like I was eating carrot cake! Only this is way better for you :) So glad I ordered this flavor.  

    Now for the red velvet cake.  Once again, I kept is somewhat simple so I could get the flavor of the oats.  
    I cooked the oats the same way with only water.  No added milk this time but I did top this bowl off with some fat free reddi whip! 
    Dessert in an bowl!!  I don't know exactly what they added to make this flavor, but they sure know what they are doing! Wow, just wow!

    After enjoying some oats the "normal" way, I decided to have a little more fun.  We all know I love pancakes, I have made just about every flavor pancake you can imagine.  So of course I was going to make some carrot cake pancakes.
    I just mixed 1 cup of the oats (40g) with 1 cup pureed carrots (240g), 3 T egg substitute (46g), 1 scoop cinnamon protein powder (30g), 1/2 t baking powder, 1 t cinnamon, a dash of salt, and some sweetener. 

    Cooked them up like regular pancakes and boom!
    That is one awesome breakfast!! Or lunch, dinner, snack, dessert...These were so good I could eat them any time! I have made carrot cake pancakes before, but these made my other ones seem like store bought frozen ones (ok, not that bad...) 

    I had one more fun idea in mind...How about some Carrot Cake Cookie Sandwiches!?
    Complete with cream cheese filling! These were soooo good!! I ground up the oatmeal into oat flour to make these delicious treats.  Perfection!! Check out my video to make some of these for yourself.  You will be glad you did :)

    They turned out so good that I made a batch to eat plain too. 
    These cookies are healthy, low fat, low carb, high protein and just plain yummy! 

    I am so glad I got the chance to review some products from MyOatmeal!!  Such a great company.  I love them even more now because I found out it is run by a husband and wife! How cute is that?! You can really tell they put their heart and soul into this business!

    I highly suggest you go order some.  Make sure you set aside a bit of time before you go to their site because you may be a little overwhelmed when you see all the flavor possibilities!! Seriously, I wanted to order so much more! As soon as I finish off these two bags (which won't take long) I think I want to try cookie dough and strawberry cheesecake :)

    Savory Cauliflower Pie

    Need a new breakfast idea?? Tired of cereal, muffins, and pancakes?! Ok, well maybe not tired of those wonderful things, but in case you want a more savory breakfast, I have just the thing for you....
    Cauliflower Pie!
    Not only is this a great breakfast, but you can also have it for lunch or dinner! You don't just get one little piece either.  The entire dish is only 230 calories! So you get to have 6 pieces :)

    Don't even say that you don't like cauliflower. This is not your average cauliflower dish.  It is sooooo creamy and delicious! You really must try it. 

    Ingredients needed will be...
    1 whole head of cauliflower, vanilla protein powder, egg substitute, fat free cream cheese, baking powder, salt, and any additional veggies.  
    *If you don't have cream cheese you could sub greek yogurt, cottage cheese, ricotta cheese...*
    *Frozen cauliflower is fine too!*

    First, cut up your cauliflower, steam it, and puree it until it's nice and smooth.
    Honestly, I have eaten it just like this many times!! With a little gravy or cheese....YUM! But today we are getting a little crazier.

    Chop up whatever other veggies you wish to add. 
    I just did pepper, onion, and mushroom. 

    Add the rest of your ingredients and mix by hand. I just used salt as a seasoning but you could add anything else such as pepper or garlic. This recipe is very customizable!
    You could also add a little cheese if you like, but I kept this one pretty simple.

    Pretty much any size and shape dish will work. You will just have to adjust your baking time.
    You could sprinkle parmesan cheese on top if you wanted, but I am not a huge fan of it.  Honestly, I don't even think it needs it!

    It will take a while to bake.  About 40-45 minutes at 350.  Use a bigger dish if you don't want to wait so long! I like it pretty thick though and it's worth the wait!
    It's done when it starts to brown around the edges. 

    I got 6 pieces out of mine, but I ate the whole thing for breakfast!! I can't get over how creamy it is from the cauliflower!
    Seriously, it doesn't even really taste like cauliflower.  It is a tiny bit sweet, but then has the flavor of all the other veggies.  And the cream cheese makes it even creamier!  I really hit a home run with this one!!

    If you struggle to eat enough veggies, you need to try this.  Remember, we put a whole head of cauliflower in there!!!

    Savory Cauliflower Pie
    • 1 head cauliflower (about 500g)
    • 1 scoop vanilla protein powder (30g)
    • 3 T egg substitute (46g)
    • 2 T fat free cream cheese (33g)
    • 1/2 t baking powder
    • dash of salt
    • any additional veggies (mushroom, pepper, onion...)
    1. Steam and puree cauliflower.  
    2. Mix in remaining ingredients.  
    3. Sprinkle cheese on top if desired.  
    4. Bake at 350 for 40-45 minutes.
    230 calories for the whole dish!

    14g Carb 
    40g Protein
